When you buy Leek or Green Onion at the local markets here in Phnom Penh, the products are half-rotten, and full of sand and dirt. I found a way to clean them without washing. You have to peel them!

Incise a sharp and pointed knife and simply peel off a few layers. As the products are very cheap here in the local markets, no problem to throw away always about 50% or more.

This process is important also for another reason. I found that when you keep them in a glass with a bit of bottled water, they keep fresh in the fridge for about one week which is great.
